A simple, healthy and nutritious soup to kickstart the new year!
Combine the oil, spices, carrot, lentils, stock and milk in a large saucepan and bring to the boil. Simmer for approximately 15 minutes, until the lentils are swollen and soft.
Puree the soup with a hand blender (or jug blender/food processor should you have such things) until smooth. Season to taste with salt and pepper.
Garnish with grated gruyere and a little extra pepper before serving.
