In the south, we call this Collard Green Soup, but don’t let the name scare you off. It is a delicious traditional Spanish soup. My husband doesn’t eat any kind of “greens,” but he loves this soup!
In a large soup pot, saute ham and onions, then add potatoes, chorizo and garlic. Add water and simmer for about an hour. Add navy beans with juice and well-drained collard greens. Simmer an additional 45 minutes or more. Add more water if you think you need to.
The chorizos are your main spice, so if it isn’t spicy enough, add red pepper flakes a pinch at a time. We require more salt, even with the ham, but you may not.
