Melt butter in a large pot over medium-high heat. Add onion and nutmeg; saute until onion begins to brown, about 5 minutes. Add the cut butternut squash, vegetable broth, diced apple and apple juice.
Bring to a boil; reduce heat and simmer uncovered until squash and apple are tender, about 30 minutes.
Working in batches, puree soup in blender until smooth. If you have a hand immersion blender, this works very well to blend the soup right in the pot. Return soup to pot if using a regular blender. Season to taste with salt and pepper.
Bring soup to simmer, thinning with more broth if needed. Ladle soup into bowls. Garnish with sour cream and chives if desired.

this was surprisingly good for how simple it is. i substituted chicken broth and apple cider based on what i had. i think either leeks or a shallot instead of onion would be great, too. i will definitely make this again, thanks for the recipe.

p.s. I didn’t have any veggie broth on hand, so I just used some home-made beef broth and it still turned out really delicious!

Oh this was sooo good. Many years ago I had a neighbour who made a soup like this – and she wouldn’t share the recipe! What a cow. LOL!
My son ate a whole big bowl of it (he’s only 2) and said “mmmmmm” and “yummmmmm” the whole time, while smacking his lips.

This soup is delicious! I’ve made other butternut squash soups, but I like the apple in this one. A great fall recipe.

I loved this soup! It was easy and delicious. I did add a little cream cheese to the center.
