Description

Delicious dinner for a cold night.

Ingredients

  • 1-¼ pound Sweet Italian Sausage
  • 1 whole Onion, Chopped
  • 1 head Broccoli Rabe, Chopped
  • 2 containers (32 Oz. Size) Chicken Broth
  • 2 cans (15.5 Oz. Size) Cannellini Beans, Rinsed
  • Salt And Pepper, to taste

Preparation

In a large saucepan cook the sausage, breaking it up, over medium-high heat until browned, about 10 minutes. Transfer to a paper towel-lined plate. Discard all but 1 tablespoon fat from the pan. Add onion to the pan and cook until soft, about 3 minutes. Stir in broccoli rabe and chicken broth. Bring to a simmer. Cook for 5 minutes. Stir in sausage and beans and cook until heated through, about 2 minutes. Add salt and pepper to taste.

I have made this twice now with the broccoli rabe from our co-op and it has been a hit both times! Last night, we used turkey sausage which made for very little grease. Excellent recipe. Next time, I might add some garlic and a bit of aleppo pepper to give it a slight kick.
