Creamy, nutritious soup—even your kids will love it!
Cook cauliflower and broccoli until tender. Set aside, reserving cooking liquid. In a large pot, heat olive oil over low-medium heat. Add onion and garlic, cook until tender. Add cheese and stir until melted. Using a food processor or immersion blender, puree cheese sauce with broccoli, cauliflower, and cooking liquid, gradually adding in chicken broth. Add salt, then milk to desired consistency (about 1-2 cups).
