Smooth and creamy black beans and lots of flavor in this easy dish.
In a stock pot over medium heat, saute the onion and peppers. Once they are softened, season them with salt and pepper. Add the black beans, the stock, salsa, cumin, and garlic salt. Allow the mixture to simmer for 30 minutes.
Use an immersion (or hand) blender to process the soup, making it smooth. Simmer for another 5-10 minutes.
Ladle out into bowls, garnishing with a dollop of sour cream and some chopped green onion. Serve with corn chips.
