A super-quick recipe that you probably already have the ingredients for—and how often does that happen?
1. In a stock pot, saute minced onion and garlic in olive oil.
2. In a blender or food processor, combine 2/3 of the beans, broth, salsa, and cumin. Blend until smooth.
3. Add the bean mixture and remaining beans to the stock pot and heat over medium heat for approximately 10 minutes or until thoroughly heated.
4. Ladle soup into individual bowls and top each bowl with a dollop of sour cream. Sprinkle with green onions. Serve with your favorite bread.
