I made this today for a small potluck and everyone loved it. I love barley, so I upped the recipe to include 3/4 cup and it was perfect. I didn’t have powdered bouillon so used 3 large Knorr beef bouillon cubes. My husband was bummed there wasn’t any left over, so I had to promise him to make it again in a few days. Make this soup, you’ll love it!

I’ve made this a few times now. My husband and I both loved it, and that is saying something because my hubby is a tough food critic. I include potatoes, increase the peral barley a little, and I increase the spices (salt & parsley). It makes a lot and freezes nicely. I like that it is healthy and Weight Watchers friendly. Great recipe.

This was very simple and the beef was very tender and good (more of it would have been nice), but the rest of the dish was not eaten with much enthusiasm.

I made this today and it was delicious. It couldn’t have been easier. This will go into my winter dinner rotation!
