Description

A creamy, beefy, delicious hot bowl of soup coming right up!

Ingredients

  • 1-¼ pound Lean Sirloin Ground Beef (93/7 Meat To Fat Ratio)
  • 1 whole White Onion, Sliced
  • 1 whole Green Bell Pepper (remove Stem And Seeds) Sliced
  • 2 cups Low Sodium Beef Stock
  • 1 cup Light Cream
  • 1-½ Tablespoon Cornstarch
  • 1 teaspoon Cumin
  • 1-½ teaspoon Black Pepper
  • 2 pinches Nutmeg
  • 2 dashes Allspice
  • 2 slices Hickory Smoked Bacon (raw), Cut Into Pieces
  • 8 slices Hickory Smoked Bacon (cooked Crispy)

Preparation

In a large frying pan or skillet over medium heat, brown meat, onions and peppers until veggies are soft and meat is cooked through. Drain any grease and place the mixture in a large Dutch oven or another pot with a lid.

In a small cup or bowl, mix to combine beef stock, light cream and cornstarch. Stir this into the mixture in the Dutch oven. Add cumin, black pepper, nutmeg, allspice and the diced uncooked bacon (for flavor). Stir again. Heat on medium until it comes to a boil. Then reduce heat to a simmer, cover with lid and let soup cook for 15 minutes. Stir once during cooking time.

On a clean work surface cut crispy cooked bacon into bite size pieces and set aside.

To serve: Ladle several spoons of soup into a serving bowl and add some delicious bacon pieces on top. Grab a spoon and dig in.

I always serve this with crusty bread. You can use crackers, croutons, anything you like. Cheese on top may be an option to consider. Hope you will enjoy as much as we do!
