Creamy and delicious tomato rice soup.
Rinse rice in a colander to remove starch. Drain well.
In a large pot add tomato juice and diced tomatoes as well as the basil, pepper, cream and drained rice. Cover the pot and cook on medium low heat for 20 minutes, stirring often. Refer to package instructions for cook time for your particular variety of rice.
Garnish with croutons or your favorite crackers. A grilled cheese sandwich on the side is great with this bowl of soup.
