Description

Yes, it’s that easy! And quick! A family favorite and a crowd pleaser. I never have leftovers when I make this.

Ingredients

  • 1 pound Bacon, Diced
  • 1 whole Medium Sized Onion, Diced
  • 5 whole Large Russet Potatoes
  • 4 cups Chicken Broth
  • 3 Tablespoons Butter
  • 3 Tablespoons Flour
  • 1-½ cup Milk
  • ¾ cups Sour Cream
  • 1 cup Shredded Cheddar Cheese

Preparation

In a large stock pot, cook bacon until crisp. Remove with a slotted spoon to drain and set aside. Drain all but 2 tablespoons of bacon grease from the pot. Cook the onions in the remaining bacon grease for about 5 minutes, until tender.

Add the potatoes and chicken broth to the pot. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until potatoes are tender. With a slotted spoon, remove a few scoops of potatoes. Place in a bowl and mash with a fork. Set aside.

In a small sauce pan, melt butter. Stir in flour and cook for 2 minutes. Whisk in milk, bring to a boil, and simmer until thickened. Slowly stir into the pot. Bring to a boil, reduce heat to low, and simmer. Stir mashed potatoes back into the pot.

Add sour cream, 1/2 cup shredded cheese, and 3/4 of the bacon. Add pepper. Stir to combine. Cook for an additional 5 minutes.

To serve, ladle soup into individual bowls and top with some shredded cheese, bacon, and optional green onions.

This was FABULOUS!!! My family won’t eat onions, so I omitted them. Instead I used some salt, pepper & celery salt. I also added a little turkey-bacon to each bowl rather than in the soup itself.

Thanks for posting it! It’s a keeper.

Yum!

Thanks for the great starter recipe. My soup turned out thick, creamy, and delicious.

I’m not overly fond of white/yellow onions, so I used about 1/4 of a large Red Onion instead and threw 3 good sized cloves of pressed garlic in with the onions about 45 seconds before they were done. I think it added a nice extra bit of flavor, and it sure smelled heavenly!

This is a wonderful soup. Easy to make, creamy and hearty. I made it once as listed and once with some lower fat items. Of course I’m a lover of good rich foods so as listed is wonderful. I also tried it with greek yogurt in place of the sour cream and it made no difference – it still tasted wonderful. I made it for my dad using greek yogurt, fat free cheese and turkey bacon. Still wonderful.

Delicious! I’ve made this twice now and added carrots the second time. That was great! We will be making this one again for sure. Try making it with the pretzel rolls on this site: yum!
