Snuggle around a bowl of this healthy, delicious soup!
In a large Dutch oven or soup pot (with lid) add vegetable stock. Heat on medium heat. When hot, add baby kale, spinach, black pepper, salt and diced onion. Cook on medium heat for 10 minutes then reduce heat to low, add beans and stir together. Place lid on pot and cook for 20 minutes on low, stirring frequently. Enjoy with some crusty bread, croutons or crackers!
