Avial is a south Indian mixed vegetable stew with coconut, a souring agent, curry leaves and coconut oil. This dish is very easy to make, tasty and goes well with plain rice. More, it’s a great way to get rid of any leftover vegetables in the fridge.
It’s also the kind of dish that’s very adaptable to your personal taste; if you don’t like a certain vegetable, you can leave it out, and add more of something else.
Take a deep pan, add water (use less for a thick gravy), sliced vegetables, salt, half of curry leaves and cumin seeds. Cook for 10–15 minutes over medium flame.
Add turmeric powder, grated coconut and chilies. Cook for 5–8 minutes.
Reduce the flame to low-medium and add yogurt. Simmer for 5 minutes.
Finish by adding rest of the curry leaves and coconut oil. Mix well and serve hot with rice.

Hi Linda,
Curry powder and curry leaves are completely different things. Curry powder is a mixture of spices. If you don’t have curry leaves, I would suggest you to omit them. You may try some bay leaves with some lime zest but still it won’t be the same as curry leaves. As far as I know, there is no substitute for curry leaves.

Curry leaves are not available in my small town in Montana. Any chance of substituting curry powder. Or is that just not done.
