A simple, delicious asparagus soup–creamy and flavorful.
1. Melt butter in a stock pot over medium heat.
2. Add diced onions and saute until softened.
3. Add vegetable or chicken broth and water. Bring it to a simmer.
4. Remove the tough bottom end of the asparagus and discard it. Chop the rest into 1-inch pieces.
5. Add asparagus to simmering broth.
6. Cook for 2-5 minutes until asparagus is bright green and tender.
7. Add cream cheese and heat until melted. Blend with an immersion blender or in a food processor.
