In a large pot heat vegetable oil over medium heat.

Add diced onion and bell pepper. Cook 4-5 minutes or until onion is translucent.

Next stir in drained pinto, kidney, black beans and corn. Once combined stir in the tomato paste.

Add the remainder of the spices (chili powder, garlic powder, paprika, salt, cayenne pepper and black pepper).

Simmer for 20 minutes over medium-low heat.
Serve with shredded cheese, chives and sour cream.

**You can adjust the amount of Cayenne pepper if 2 Tablespoons is too hot. It is quite spicy.

I have also made this recipe a few times with adding a tsp of Cumin and a tsp of Oregano, they are a nice addition to this hearty dish.

This was really good, I modified it somewhat so I could use what I had on hand, and made it less spicy so my children would eat it.

I used onion powder in place of the whole onion (one picky little won’t eat onion chunks), I didn’t have a bell pepper on hand so I left that out, and only had black beans and kidney beans on hand. Reduced the cayenne pepper to just 1/4 of a teaspoon (I know, we’re wimps!) and I added a tablespoon of worchestershire sauce .

This was the first chili I’ve tried that my husband actually liked. We made homemade cornbread to go with it and every last bite got gobbled up. Thanks!

It was a good recipe. I didn’t have all the right ingredients but I used what I had on hand. I didn’t use all the spice and it was still a little too spicy for my family’s taste. One of my two-year-olds wouldn’t eat it. It was awesome with a little cottage cheese mixed in. All in all, still much better than the previous chili recipe I was using.

This was excellent! I doubled the meat, using 1 lb. ground turkey, and 1 lb. lean ground beef, and only added 1/2 t. cayenne (we’re a bunch of wimps). This fed 18 people in the format of topping for baked potatoes and/or use as Frito chili pie…but by the time some people went back for thirds, they scraped the bowl clean. Received many compliments, and will definitely use this recipe again.

Loved it! We made it in the crock pot instead of on the stove, but it turned out perfectly. Definitely has a slight kick, but oh so good and awesome for the changing seasons.
