Roasted acorn squash is a super easy and healthy side dish for the fall!
Preheat oven to 375ºF. Prepare a large baking sheet with cooking spray.
Place squash on tray and drizzle with olive oil. Season with salt, pepper, cinnamon, nutmeg, and coriander. Toss to combine and then lay squash flat on baking sheet.
Bake for 45–50 minutes, until softened. Remove from oven and serve.
