Description

Healthy, vegan, and so easy to throw together as a side dish or potluck dish.

Ingredients

  • FOR THE SALAD:
  • 1 can (15 Oz. Size) Kidney Beans, Rinsed And Drained
  • 1 cup Fresh Or Frozen (and Thawed) Shelled Edamame
  • 1 cup Fresh Green Beans, Stems Removed And Cut Into 1 Inch Pieces
  • 1 can (15 Oz. Size) Garbanzo Beans (Chickpeas), Rinsed And Drained
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 cup Diced Celery, White Parts Removed
  • ½ cups Diced Red Onion
  • 2 Tablespoons Chopped Fresh Parsley
  • FOR THE DRESSING:
  • ¼ cups Fresh Lemon Juice
  • 2 Tablespoons Agave Syrup
  • ¼ cups White Wine Vinegar
  • 1 teaspoon Extra Virgin Olive Oil
  • ¼ teaspoons Ground Sea Salt
  • ¼ teaspoons Freshly Ground Black Pepper

Preparation

In a large bowl, combine all beans, celery, red onion, and parsley. Stir.

In a small bowl, combine dressing ingredients. Stir with a whisk, then add to the bean mixture. Stir well to combine.
