Description

A sweet, sour, and spiced shredded carrot salad. The color scheme is especially perfect for fall or Halloween, plus it has pumpkin seeds!

Ingredients

  • FOR THE VINAIGRETTE:
  • 4 cloves Garlic, Minced
  • 1-½ Tablespoon Distilled White Vinegar
  • 2-½ Tablespoons Red Wine Vinegar
  • ½ teaspoons Ground Turmeric
  • 1 teaspoon Fennel Seed, Ground
  • ½ teaspoons Cumin Seed, Ground
  • 1 teaspoon Kosher Salt, Plus More As Needed
  • 1-½ teaspoon Dijon Mustard
  • ½ teaspoons Pure Maple Syrup
  • 9 Tablespoons Good Quality Olive Oil
  • FOR THE SALAD:
  • 4 whole Large Carrots, Shredded (about 6 Cups)
  • ½ cups Raisins
  • ⅔ cups Raw Pepitas Or Pumpkin Seeds, Divided
  • 1 cup Cooked Chickpeas, Drained And Rinsed
  • ¼ teaspoons Ground Black Pepper

Preparation

To make the vinaigrette, whisk together all ingredients except oil. When combined, continue whisking while drizzling in oil until emulsified. Season to taste with more salt, and pepper if desired.

Combine shredded carrots, raisins, all but a couple tablespoons of pumpkin seeds, and chickpeas in a large bowl. Add dressing and toss to combine. Garnish with pumpkin seeds, either leaving them whole or crumbling them, and fresh ground black pepper.
