I love the Cheesecake Factory’s Lettuce Wraps. However, the nearest one is nearly two and half hours away in the “big city”. Here is my adaptation using Ree’s Spicy Peanut Pasta Salad Sauce and the end result is astoundingly GOOD!
Baste chicken breast with a light coating of olive oil, sprinkle with kosher salt and freshly cracked pepper. Grill.
While the chicken is grilling, prepare the peanut sauce using a blender or food processor
3-4 garlic cloves, peeled
3 Tablespoons Peanut butter (chunky or smooth)
3 Tablespoons Rice Vinegar
4 Tablespoons brown sugar
1/4 teaspoon crushed red pepper
1/3 cup olive oil
1 Tablespoon toasted sesame seed
Once the peanut sauce is blended, and chicken is grilled and sliced into strips, build your wraps with the shredded/chopped vegetables, top with peanut sauce and enjoy!
