Delicious sous vide lamb chops.
Start sous vide machine and set to 140ºF.
Sprinkle salt and pepper on both sides of lamb chops. Place lamb chops in resealable bag and add rosemary and thyme. Seal bag using immersion method. Place bag in water bath and cook for 2 hours.
Heat skillet over medium high heat and add olive oil. Sear chops for 1 minute on each side. Rest for 5 minutes before serving.
