Description

This oatmeal is so easy to make the night before. Wake up to a delicious breakfast waiting in the morning! Try different fruit and nut combinations. I like to experiment with almonds, pecans, walnuts, dates, dried cranberries, and golden raisins!

Ingredients

  • 1 cup Steel Cut (Irish) Oats
  • ⅓ cups Brown Sugar
  • 2 Tablespoons Maple Syrup
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract
  • ¼ cups Chopped Nuts
  • ½ cups Dried Fruit
  • 4 cups Water

Preparation

1. Spray crockpot with nonstick cooking spray.
2. Combine all ingredients in the crockpot the night before, adding an additional cup of water if you plan to cook your oatmeal for more than 8 hours.
3. Turn crockpot to the “keep warm” setting and cook for 8 hours. Depending on how thick you like your oatmeal, you may turn the crockpot up to “high” in the morning and cook for 30 extra minutes if it is not thick enough for your liking.
4. Stir just before serving and enjoy.

This is sooo good and super easy. My only complaint is I always have to put keep it in there longer. Still trying to get the timing/water worked out. Yummy though!
