Description

This recipe was such a brilliant find…it’s got an amazing flavor and is delightfully low in fat and calories.

Ingredients

  • 1 whole Onion, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 1 Tablespoon Oil
  • 1 pound Turkey Kielbasa, Sliced
  • 14 ounces, weight (1 Can) Great Northern Beans, Rinsed And Drained
  • 14 ounces, weight (1 Can) Pinto Beans, Rinsed And Drained
  • 14 ounces, weight Canned Stewed Tomatoes
  • 10 ounces, weight Can Of Rotel
  • 8 ounces, fluid Tomato Sauce
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Pepper

Preparation

In a large skillet, saute the onion and green pepper in oil over medium heat until tender. Add all of the remaining ingredients and bring to a boil. Reduce heat and simmer until heated through. Serves 8.

Nutrition: 253 calories, 8g fat, 2g saturated fat, 35mg cholesterol, 1100mg sodium, 31g carbs, 7g fiber, 7g sugar, 17g protein, 8% vit. A, 41% vit. C, 8% calcium, 15% iron.

I made this for my family and we enjoyed it a lot! It was very filling and savory! :) I think next time I might serve it with some rice.

We tried this last night. I made it in the crockpot and thought it turned about pretty good that way. He thought it could use a little more seasoning but otherwise he loved it. He mentioned it would have been great with dumplings!

I’m sorry to say that my family did not like this dish very much. It seemed like it would be great when I read it. However, the tomato flavor over-powered everything else. I wonder about substituting the tomato sauce for another liquid.
