If you love onions and quiche, then you have to try this! A thick crusted pie great for brunch or a side dish.
Preheat oven to 350 degrees.
Saute onions in 1/2 stick butter and the olive oil until golden. Add salt and pepper and cayenne when the onions are almost done.
Mix the remaining 3/4 stick butter, melted and crushed Ritz crackers. Press in a pie plate to make a shell.
When onions are done and have cooled for a few minutes, add them to the pie shell.
Beat eggs, milk and a little more salt and pepper together and pour over onions.
Grate the cheese and add to the top.
Bake for 30 minutes.
Let cool for at least 10 minutes before serving.
