Gluten-free baked ziti can be difficult to cook, as the pasta often becomes mushy in the oven. After testing out numerous recipes, this one has become my favorite. Bon appetit!
Cook pasta (it helps to slightly undercook, as it will cook more in the oven).
In a large bowl, mix pasta, ricotta and mozzarella cheese (save some for sprinkling at the end).
Fill a large pan with half of the spaghetti sauce. Pour pasta and cheese mixture in pan. Cover pasta with remaining spaghetti sauce.
Sprinkle remaining mozzarella cheese along with Italian seasoning and parsley on top. Bake for 25–30 minutes.
