Description

Use storebought roasted chicken (or leftover chicken from a previous meal) to make this quick and easy Malibu Chicken. It works well with thighs, too, and that would increase the fats somewhat. Pairs well with roasted radishes. Multiply servings as needed. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten-free, grain-free.

Ingredients

  • FOR THE SAUCE:
  • 2 Tablespoons Best Foods/Hellman's Real Mayonnaise
  • 1 teaspoon Dijon Mustard (not Honey Mustard)
  • ½ teaspoons Yellow Mustard
  • ½ teaspoons Walden Farms Pancake Syrup (or Sweetener Of Choice)
  • FOR THE CHICKEN:
  • 3 ounces, weight Roasted Chicken Breast With Skin (unbreaded), Warmed
  • 1 slice Kirkland Deli Ham (or Similar Size)
  • 1 slice Sargento Baby Swiss Cheese
  • 1 sprig Fresh Rosemary, Leaves Only

Preparation

Mix all of the sauce ingredients in a small dipping bowl, set aside.

Place the chicken on a serving plate, and warm in microwave if not already warm. Top with the ham, folded in half. Top with the cheese slice.

Microwave for about 10 seconds, just until the cheese begins to melt. Garnish with fresh rosemary leaves. Add the dipping sauce to the plate, along with any desired sides.
