This is more a method than a recipe, I suppose, for a company leg of lamb dinner you can prepare after you get home from work.
Have the butcher bone a leg of lamb, butterflying it out as flat and evenly as possible, so that cooking time will be more or less the same for the piece of meat. Rub with garlic and soy sauce. Let marinate for two hours in the refrigerator. Bring to room temperature if you have time.
Broil for ten minutes on the skin side. Turn and broil for ten minutes on the other side. Turn oven off and let it sit in the “off ” oven for another 10 minutes. Slice thinly. I serve this with a fresh mint sauce.
