Super Easy Jiffy Corn Pudding

Description
This Jiffy Corn Pudding is made with tons of pepper jack cheese for spice, sour cream for tang, and melted butter because melted butter is invited to every party. This is the perfect holiday side dish and can be made entirely in advance!
Ingredients
- 1 box (8 1/2 Oz. Size) Cornbread Mix, Such As Jiffy
- 1 bag (16 Oz. Size) Frozen Corn (Do Not Thaw)
- 2 whole Eggs
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- ½ teaspoons Kosher Salt
- ½ cups Sour Cream
- ½ cups Heavy Cream
- 8 ounces, weight Grated Pepper Jack Cheese
- ½ sticks Melted Butter
- 1 Tablespoon Fresh Thyme Leaves
- 10 whole Butter Crackers Such As Ritz, Crushed
Preparation
Preheat oven to 350ºF. Grease a 8×8 baking dish (or other small baking dish) with butter or cooking spray.
In a large bowl, combine all of the ingredients except for the cracker crumbs, just until combined. There may be a few lumps—that’s ok!
Transfer mixture to prepared baking dish. Sprinkle crackers over top. Bake corn pudding for 1 hour until lightly golden at the edges and set in the middle.
Serve hot, cold, or room temperature. Enjoy!
