This Jiffy Corn Pudding is made with tons of pepper jack cheese for spice, sour cream for tang, and melted butter because melted butter is invited to every party. This is the perfect holiday side dish and can be made entirely in advance!
Preheat oven to 350ºF. Grease a 8×8 baking dish (or other small baking dish) with butter or cooking spray.
In a large bowl, combine all of the ingredients except for the cracker crumbs, just until combined. There may be a few lumps—that’s ok!
Transfer mixture to prepared baking dish. Sprinkle crackers over top. Bake corn pudding for 1 hour until lightly golden at the edges and set in the middle.
Serve hot, cold, or room temperature. Enjoy!
