These soft and chewy red velvet cookies with white chocolate chips in every bite is the perfect cookie for Valentine’s day. The base for these cookies uses a box of red velvet cake mix.
Preheat oven to 350ºF.
In a large bowl, whisk eggs and vegetable oil together. Add cake mix and whisk until a thick dough forms. Fold in white chocolate chips with a spatula.
Using a cookie scoop, place cookie dough 2 inches apart onto ungreased baking sheets. Bake for 10–12 minutes.
