Description

Try these fluffy and aromatic Gingerbread Pancakes for your Christmas breakfast!

Ingredients

  • 1-¼ cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ginger
  • ⅛ teaspoons Cloves
  • ⅛ teaspoons Nutmeg
  • ⅛ teaspoons Allspice
  • ¼ cups Sugar
  • ¾ cups Milk
  • 2 Tablespoons Molasses
  • 2  Eggs
  • 4 Tablespoons Butter, Melted
  • Maple Syrup, Butter, Powdered Sugar, For Topping

Preparation

Preheat a griddle pan or griddle to medium heat.

In a medium size bowl, combine all dry ingredients (flour, baking powder, baking soda, salt, spices).

In another medium bowl, combine all the wet ingredients (sugar, milk, molasses, eggs). Combine wet ingredients with dry—do not over-mix! You want the batter to be nice and clumpy, it makes for fluffier pancakes.

Spray nonstick griddle pan with some cooking spray and spoon or scoop ¼ cup of batter onto pan. These should a few minutes (about 2–3 minutes) on the first side. Once the edges appear to be cooked, flip over with a flat spatula and cook for 1 more minute. Continue until you’re out of batter.

Stack as desired and cover in butter, maple syrup, powdered sugar—or all three! Enjoy!

I made these for my family on Christmas morning. They definitely tasted like gingerbread, and unlike some other “specialty” pancake recipes I’ve tried, they rose high and fluffy. Even my toddler loved them.
