Made with simple ingredients, this is one bowl of creamy deliciousness.
In a medium sauce pan, heat olive oil. Add garlic and sauté until fragrant. Add in Rotel, rice and broth. Season with a pinch of salt and pepper.
Bring to a boil. Reduce heat and simmer until broth is absorbed and rice is tender, about 18-20 minutes. You may need to add more broth/water as needed.
Fold in Monterey-Jack cheese, stirring until melted. Adjust seasoning to your taste.
