Soft heirloom carrots roasted in a cinnamon orange glaze.
Preheat oven to 400°F.
Melt butter, salt, cinnamon, olive oil, nutmeg, brown sugar, and orange juice in a microwave safe container or in a small sauce pan over medium heat.
Drizzle glaze over cut carrots in a baking safe container. Place in the oven for 50 minutes, stirring occasionally.
Serve carrots sprinkled with orange zest and chopped carrot top greens.
Note: Cut carrots quartered, lengthwise for a dramatic presentation.
