Description

Quesadilla in pie form. Cheesy, creamy, and delicious!

Ingredients

  • 1 whole 10-inch Flour Tortilla (any Flavor You Like)
  • 1  Rotisserie Chicken, Skin Discarded, Meat Shredded Into Bite-sized Pieces
  • 2 cups Shredded Sharp Cheddar Cheese, Divided
  • 1  Jalapeno, Finely Chopped (optional)
  • ½ cups Finely Chopped Fresh Cilantro
  • 1 teaspoon Salt, Divided
  • ½ teaspoons Pepper
  • 2  Eggs
  • 1 cup Whole Milk
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Powder

Preparation

Set oven rack in the middle of the oven and preheat oven to 450ºF.

Spray a 9-inch pie plate with cooking spray and press the tortilla into the pie plate.

In a bowl, combine chicken, 1 cup cheese, jalapenos, cilantro, 1/2 teaspoon salt and pepper.
Spread the filling in the pie plate over tortilla.

Whisk eggs, milk, flour, baking powder, and remaining 1/2 teaspoon salt. Pour over the chicken mixture and sprinkle remaining cheese on top.

Bake for about 16–20 minutes or until top is golden brown. Let cool for 5 minutes before serving.
