Description

This moist lemon loaf is the perfect summertime dessert, and by far my favorite! Way better than what you get at your local coffee shop! Plus it’s super simple to make!

Ingredients

  • FOR THE LOAF:
  • 1 cup Milk
  • 1 teaspoon Apple Cinder Vinegar
  • ½ cups Butter, Softened
  • 1 cup Sugar
  • 1  Egg (large)
  • 1 whole Lemon, Zested
  • 3 Tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Flour
  • ¾ teaspoons Kosher Salt
  • 1-½ teaspoon Baking Powder
  • ½ whole Lemon, Juiced (optional), To Squeeze Over Baked Loaf
  • FOR THE GLAZE:
  • ⅓ cups Powdered Sugar
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract

Preparation

In a measuring cup, combine milk and apple cider vinegar; set aside. In a large bowl, combine butter and sugar, cream together. Add egg and mix until smooth. Add zest, vanilla and lemon juice; mix well. In a small bowl, whisk together flour, salt and baking powder. Add dry ingredients alternately with milk to the butter mixture. Mix well. Pour into a prepared loaf pan and bake at 350ºF for 40-45 minutes or until and inserted toothpick comes out clean, and loaf is very light golden color. You can squeeze half a lemon over the top of the loaf while it is still hot to give it extra lemon flavor.

Let cool, then for the glaze, combine powdered sugar, lemon juice and vanilla. Whisk until you have a smooth glaze and pour over loaf. Enjoy with a nice cup of Earl Grey.
