Delicious Hamantashen for Purim made just a little healthier.

Ingredients

  • FOR THE FILLING:
  • 1 can (15 Oz. Can) Pumpkin Puree
  • 2 Tablespoons Maple Syrup
  • 3 Tablespoons Light Brown Sugar
  • 1 teaspoon Pumpkin Spice
  • _____
  • FOR THE DOUGH:
  • 2 whole Eggs
  • ⅔ cups Oil
  • 1 Tablespoon Vanilla Extract
  • ¾ cups Sugar
  • 2-½ cups White Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt

Preparation

Preheat oven to 350ºF. For filling, mix pumpkin with the rest of the filling ingredients. Set aside.

For the dough, beat eggs, oil, vanilla and sugar together in a mixer or by hand. Add flour, baking powder and salt and mix until well combined.

Place dough on a floured surface and roll out to 1/8 inch thick. Cut out rounds with a cup or biscuit cutter.

Drop a teaspoon of filling in the middle of the circles. Pinch three corners together forming a triangle. Place on a parchment-lined cookie sheet. Bake for 10 minutes at 350ºF.

I have a question about the flour measurement….I’m making this recipe right now (looks so good in your picture) & am finding that 10 and a half cups of flour seems like a lot …I just have crumbs and haven’t even added all of the flour yet. There’s no way this will come together as a dough. Am I doing something wrong?
