Description

These buttery cookies have a very subtle lemon flavor and are chock full of white chocolate chips and nuts. I dare you to eat just one!

Ingredients

  • 1-½ cup Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Butter, Softened (I Use Salted)
  • ½ cups Packed Brown Sugar
  • ¼ cups Granulated White Sugar
  • 1 whole Large Egg
  • 1 Tablespoon Lemon Juice
  • 2 cups White Chocolate Chips
  • 1 cup Coarsely Chopped Nuts (I Use Walnuts)
  • 1 teaspoon Grated Lemon Peel

Preparation

Preheat oven to 375 F.

Combine flour, baking soda, and salt in a small mixing bowl. Set aside.

Beat butter, brown sugar, and granulated sugar in a large mixing bowl until creamy. Beat in the egg and the lemon juice; then gradually beat in the flour mixture. Stir in the chocolate morsels, nuts, and the lemon peel.

Drop by rounded tablespoonfuls onto ungreased baking sheets. Bake 7 to 10 minutes or until the edges are lightly browned. Cool on the baking sheets for 3 minutes, then remove to wire racks to cool completely.

**The lemon flavor in these cookies is very subtle. If you like more lemon flavor, add more lemon juice and/or lemon peel. Enjoy!
