These are light, buttery, crispy cookies. Yum-o!
In a large bowl with mixer on low speed, beat butter and sugar until blended. Increase speed to high and beat until light and fluffy (approximately 3 minutes). At low speed, beat in flour, vinegar and baking soda until mixed. Cover bowl and chill dough for 1 hour.
Preheat oven to 350ºF. Drop dough by rounded teaspoonfuls, about 2 inches apart onto an ungreased baking sheet and bake for 13-15 minutes until cookies are set and edges are light golden brown. Let cookies sit for 2-3 minutes before transferring them to a cooling rack.
Makes approximately 4 dozen cookies.
