Traditional chewy and delicious chocolate chip cookies but completely vegan!
Preheat oven to 375 F. In a mixing bowl, cream together coconut oil and sugars.
In a small bowl mix together ground flax seed and water to make a paste. Add this into the coconut oil and sugar mixture along with the baking soda, salt and vanilla. Mix to combine.
Mix in flour and chocolate chips. Add small amounts of water (up to the listed amount) until dough comes together and isn’t crumbly.
Drop dough by tablespoonfuls onto greased cookie sheets, placing them 2″ apart. Bake for 12-15 minutes or until lightly browned. Transfer to wire rack to cool.
