A quick, easy, delicious cookie. No oven needed. I have been making these since I was 12 and still love them.
Melt chocolate and butter together over double boiler or in microwave. Once the chocolate is melted, blend in sugar, vanilla, eggs, salt (only if you used unsalted butter) and finally the flour. Best if cooked immediately.
Warm waffle iron (use a standard sized waffle iron, not Belgian) according to the manufacturer’s directions. If your waffle iron is round, you can cook four cookies at a time. One in each section. If you have a square waffle iron, you may only be able to cook two at a time.
Drop batter by teaspoonfuls onto waffle iron and close. Cookies only take approximately 2 minutes to cook. When steam begins to escape, they are done. Watch closely! Remove with two forks, carefully spearing and then lifting each cookie from the iron.
A repeat warning: Do NOT use a Belgian waffle iron. It just does not work the same and the texture of the cookies is off.
