Description

I have a friend who is obsessed with Butterscotch… hence, the creation of “triple chip” cookies!

Ingredients

  • ¾ cups Unsalted Butter, Softened At Room Temperature
  • 1 cup Brown Sugar
  • ¼ cups White Sugar
  • 1 whole Egg
  • 2 teaspoons Vanilla Extract
  • 2 cups All-purpose Flour
  • 2 teaspoons Cornstarch
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 3 ounces, weight Dark Chocolate Chips
  • 3 ounces, weight White Chocolate Chips
  • 4 ounces, weight Butterscotch Chips

Preparation

Preheat oven to 350 F.

Using a fork, beat together the butter and the sugars until smooth and fluffy.

Add in the egg and beat until well combined. Add vanilla (and again) beat until well combined.

Sift together flour, cornstarch, baking soda and salt in a separate bowl. Slowly stir into wet mixture.

Stir in chocolate chunks. Chill in the fridge for about 30 minutes.

Drop by tablespoons onto a greased baking lined with parchment paper and bake for 8-10 minutes, until golden brown around the edges.
