From time to time I succumb to the ease of refrigerated cookie dough. It gives you time to get creative with the rest of the recipe. But both dough and creativity take just a few minutes for this fun little “pizza” project that is sure to please those who love to snack on trail mix!
Tip: I rolled out the dough on a rubber pastry mat then inverted the pizza pan over the top of the circle and flipped the mat/pan over.
Preheat oven to 375 F. Roll out the dough to form a 12” circle. Transfer to a pizza pan (see tip above). Evenly spread the trail mix over the crust and press down slightly. Put it into the oven and bake for 15 minutes (or until done in center and firm at edges). Remove pan from oven and set on a rack. Allow pizza to thoroughly cool. Melt the white chocolate (in the top of a double boiler or in the microwave for 30 seconds at a time until smooth) and drizzle over the cookie as mock “cheese”.
