Butterscotch cookies made with Chinese noodles and bursting with peanuts and white chocolate chips!
Melt butterscotch chips in a medium size bowl in 30-second increments, until melted completely. Add in peanut butter and stir until combined and smooth. Mix in chow mein noodles and peanuts until everything is coated evenly.
Drop spoonfuls of the mixture onto a greased or parchment-paper-lined baking sheet. Top with chocolate chips or add-ins of choice. Place in refrigerator until chilled and hardened.
