My Great-Aunt Lucille used to send these to me and my siblings ages and ago and we looked forward to them all year long! Now my daughters love them and begged me to submit the recipe.
Preheat oven to 225 degrees. Line cookie sheets with parchment paper.
In large glass or metal bowl, whip egg whites, salt and cream of tartar until soft peaks form. Gradually add sugar while beating until stiff peaks form, approximately 5 minutes. Gently blend green food coloring and peppermint extract to taste and color preference. Then fold in mini chocolate chips.
Drop by spoonfuls (or pipe through a Ziploc baggie) onto prepared cookie sheet(s).
Bake for 90 minutes in the preheated oven, until dry. Cool on the baking sheet(s).
Eat some and share some!
