Description

Pumpkin stuffed between a cake mix crust and crunchy topping … Pretty much to die for!

Ingredients

  • FOR THE BASE:
  • 1 box Yellow Cake Mix, 18 Ounce Box, Reserve 1 Cup For Topping
  • 1 whole Egg
  • ½ cups Butter, Melted
  • FOR THE FILLING:
  • 1 can (15 Oz Can) Libby's Pure Pumpkin
  • 2 whole Eggs
  • ⅔ cups Milk
  • ½ cups Brown Sugar, Packed
  • 3 teaspoons Cinnamon
  • 1 teaspoon Vanilla
  • FOR THE TOPPING:
  • 1 cup Yellow Cake Mix (reserved)
  • ½ cups Butter, Softened
  • ¾ cups Sugar

Preparation

1. Preheat oven to 350 F.

2. In a large bowl mix base ingredients well and press into a 9×13 cake pan.

3. In a medium-sized bowl mix the filling ingredients well and pour over the base.

4. In a small bowl, thoroughly mix all of the topping ingredients, until it’s crumbly. Sprinkle over the top of the middle layer.

5. Bake 50-60 minutes or until it is golden brown and the middle is set.

Should the butter really be 1/2 cup? Or maybe it should be 1/2 stick? Reason I ask is because my topping was more of a paste, not at all crumbly. What did I do wrong?
