Description

Tiramisu stuffed cupcakes—quite possibly the best thing to ever come out of my kitchen!

Ingredients

  • FOR THE CUPCAKES:
  • 1-½ cup Flour
  • ¾ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 6 Tablespoons Butter, Softened
  • ¾ cups Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract (or Seeds From One Vanilla Bean)
  • ½ cups Milk
  • _____
  • FOR THE FILLING:
  • 8 ounces, weight Mascarpone Cheese
  • 1-½ cup Confectioners Sugar
  • 2 teaspoons Instant Coffee Granules
  • _____
  • FOR THE FROSTING:
  • 1 stick Butter, Softened
  • 2 cups Confectioners Sugar
  • 1 Tablespoon Milk
  • 1 teaspoon Instant Coffee Granules (or Coffee Extract)
  • Cocoa Powder, For Dusting

Preparation

First, make the cupcakes.

Preheat the oven to 350ºF.

In a medium sized bowl, whisk together the flour, baking powder and salt. Set aside.

Cream together the butter and sugar and then add the eggs, one at a time, beating well after each addition. Add the vanilla.

Alternately add the dry ingredients and the milk, starting and ending with the milk. Scoop batter into greased cupcake molds and fill 3/4 full. Bake for 25 minutes or until golden.

While the cupcakes are baking, make the filling. Beat together the marscapone cheese, powdered sugar and instant coffee until smooth. Scoop into a small plastic bag and cut off the tip for easy piping.

Once cupcakes are baked and cooled, take a pastry tip (or use a small knife and spoon) and press down into the center of each cupcake, twisting to create a hole in each of the centers. Brush out any crumbs. Pipe filling into each hole.

For the buttercream, cream together the butter with the powdered sugar. Once smooth, add the milk and coffee granules or extract. Beat until light and fluffy. Scoop buttercream into a large plastic bag fitted with a pastry tip. Frost cupcakes and then dust with cocoa powder before serving.

Oh. My. Goodness. These look sinful! If only I could ever get my frosting to swirl so beautifully in DQ soft serve-esque fashion!

I made these for a family get together last week and they simply vanished. Everyone raved about them. Thankfully, I kept extra at home just in case. I ended up doubling the frosting so I would have enough, though I still ended up with leftover filling. (Full disclosure: I used a different recipe for the cake portion as I was making them for a large group and doing multiple frosting flavors.

I am in love. In fact, I was up all night thinking about how much I loved these. Oh wait, no that was probably from the caffeine buzz I got from eating one at 9:45 at night. Oops, can you tell I am not a coffee drinker? That being said, these are amazing. I had plenty of cream filling and not enough frosting for the 11 cupcakes I made, however, I just swirled a bit of the cream filling into the frosting as I went and ended up perfect! Yay! The families I took these to today say THANK YOU! :)

WOW! These are so good! Tiramisu may be my favorite thing on the planet and these cupcakes do a wonderful job capturing all that is good about Tiramisu. The filling did make way more than I needed (perhaps I didn’t add enough to each cupcake), but honestly I know it will be gone by tomorrow. I can smear it on anything it is so delicious. I like my frosting a little less sweet than this one, but it’s actually perfect for the cake. Thank you so much for posting this recipe. I made these and put them in little jam jars for one of the yummiest teacher gifts!
