Description

These cookies sound impossible but they are the best peanut butter cookies I have ever eaten. Give them a try and you’ll see what I mean.

Ingredients

  • 1 cup Peanut Butter, Smooth Or Crunchy
  • 1 cup Sugar
  • 1 whole Egg, Beaten

Preparation

Preheat oven 350 degrees.

Cream peanut butter and sugar together. Add egg and mix well.

Put walnut-size balls of dough onto a cookie sheet and flatten with the tines of a fork that have been dipped in sugar. Rotate the direction of the fork and press sugar-coated tines across the cookie again to make a criss-cross pattern.

Bake 8-10 minutes.

You can double or triple the amount of ingredients for more cookies.

I too make these all the time. Only I make mine with splenda instead of regular sugar, 1 tsp of vanilla and if I have on hand a sugar free dark chocolate tucked inside. Yummy.

What a hidden gem! Who knew 3 ingredients could produce such yummy cookies. I was so tempted to add flour, vanilla, etc… but I stayed true to the recipe and glad I did. I would say these measurements only make about a dozen cookies, so double up if you want more. Otherwise, delish! :)
