Description

These are light and delicate almond cookies that will put a smile on your face.

Ingredients

  • ½ cups Butter, Softened
  • ¾ cups Sugar
  • 1 whole Egg
  • ¾ teaspoons Almond Exract
  • ⅓ cups Ground Almonds
  • 1 cup Flour
  • 1 cup Sliced Almonds
  • Milk Chocolate, Melted For Garnish

Preparation

Preheat the oven to 350 degrees.

In a medium bowl blend the butter and sugar until mixture forms a grainy paste. Scrape the sides of the bowl, then add the egg and almond extract. Beat at medium speed until light and fluffy.

Add the ground almonds and flour and blend at a low speed until combined. Do not over-mix. Form the dough into 1-inch balls and roll in the sliced almonds, coating thoroughly. The less you handle these, the lighter they will be. Place the balls on an ungreased cookie sheet, 2 inches apart. Bake for 15-18 minutes until cookie is slightly brown along the edges. Immediately transfer cookie to a cooling rack.

Once the cookies are completely cooled, drizzle the melted chocolate on top. Refrigerate the cookies to help the chocolate set.
