I started with a basic chocolate chip cookie recipe and have adapted it along the way, adding in nuts, dried fruit, oatmeal and whatever else I might be craving at the moment. The uncooked dough is outstanding! Or so I hear.
Preheat oven to 375.
Beat butter with white and brown sugar until creamy.
Add in eggs and vanilla, stirring out any lumps.
Add in flour, oatmeal, salt, baking powder and baking soda.
Add in chocolate chips and nuts (if desired – I use pecans and walnuts).
Spoon onto cookie sheet and bake at 375 for about 10 minutes.
Optional add-ins: dried fruit – like blueberries or cranberries, flax seed or quinoa.
I generally like to under bake these cookies by about 2 minutes, and once they are cooled, they are incredibly moist and chewy.
