Description

Delicious, crunchy tahini cookies.

Ingredients

  • 1 pound, 1-⅔ ounces, weight Flour
  • 7 ounces, weight Butter, Softened At Room Temperature
  • 1 teaspoon Baking Powder
  • 2 whole Eggs, Plus 1 Egg Yolk
  • 1 cup Sesame Oil
  • 3-⅝ ounces, weight Caster Sugar
  • 1 cup Tahini
  • 1 cup Walnuts
  • Sesame Seeds, For Coating The Cookies

Preparation

1. In a large bowl mix the flour, butter, baking powder, and 2 eggs. Make a dough.

2. Mix the sesame oil, sugar, tahini and walnuts together and process into a paste.

3. Using a rolling pin, roll out the dough into a big, thin disk.

4. With a spoon, put some of the tahini and walnut paste on one edge of the dough, about 4cm wide.

5. Roll the tahini-covered portion of the dough twice and cut out the rolled dough with knife. Set aside. (You will be left with a roll of dough with tahini, and the rest of the dough on your surface.)

6. Repeat the process with more tahini on the remaining dough, again rolling up the dough twice and cutting it. Keep doing this until you use all of the tahini paste and dough.

7. Brush the top with egg yolk and sprinkle sesame seeds on the cookies.

8. Bake cookies in a 180C oven until golden brown.
