I don’t quite remember how these cookies got this name, but it stuck since it happens to be my son’s name. Strangely enough, they’re his favorite cookie at Christmas time. I love how simple they are to make, and everyone always asks for the recipe. The combination of the salt on the crackers and the sweet of the chocolate is sooo great!
Line a large baking sheet with aluminum foil and spray generously with cooking spray.
Line the entire sheet with saltines, salt side up.
In a medium sauce pan, melt butter. Add sugar. Stir, and bring to a boil. Allow to boil for 2 minutes.
Remove from heat and stir in vanilla.
Drizzle gently (I use a small ladle) over the saltines, coating evenly.
Bake at 350 degrees for 10 to 12 minutes, watching carefully not to burn.
Remove pan from the oven and sprinkle with chocolate chips, allowing them to melt. Spread evenly over saltines, then sprinkle with nuts.
Chill till set, then break by hand into small pieces. Store in an airtight container.
